Roasted Sweet Peppers


I've been drowning in peppers for the last month, and they're still coming in every day.  I decided to keep the plants going until frost, so I'm just going to have to deal with the overload.  This recipe for Roasted Red Peppers Preserved in Olive Oil looked good and seemed like a nice way to have some roasted peppers ready to go when needed, and they are really delicious! Of course, I used a mixture of red, yellow, orange and green sweet peppers.

 Packed in hot olive oil
Ready for the fridge and to use in recipes and meals!
